Hospitality and Catering

Food is a fundamental part of life. All pupils should have a basic understanding of the properties of food and particularly the principles of hygiene and safe food handling. They also need practical skills to prepare food. These elements will benefit and protect pupils now and throughout their lives.             (Miss Owen - Subject Lead)

Subject Overview

Hospitality and Catering is one of the subjects we teach at The Mosslands School under the domain ‘Design and Technology’. Year 7 and Year 8 students will undertake projects in both Hospitality and Catering and Technology. Year 8 students will also experience GCSE taster sessions in Hospitality and Catering, Construction and Technology to enable them to make the appropriate choices when selecting subjects to study at KS4.

KS3 Hospitality and Catering

Lessons will be a combination of three demonstrations and practical cooking sessions led by the teacher. Students will learn and demonstrate cooking techniques, knife skills and presentation skills by following and making healthy recipes. Students will develop time management and teamwork skills. Students will learn about Food Safety and Hygiene, The Functions of Nutrients, Seasonality, Sustainability, Sensory Analysis and Job Roles in the industry through theory lessons.

KS4 Eduqas Level 1/2 Award in Hospitality and Catering

Students can choose to study this course at KS4 as part of our vocational qualification package. Students will have the opportunity to plan and prepare dishes, often to meet specific dietary requirements, cultural and ethical needs. They will learn and develop more theory in depth in preparation for an exam through active learning (students have the opportunity to retake the exam and the best mark goes towards their overall grade).  Year 9 is a foundation year for students to develop basic skills and knowledge in preparation for Year 10 and Year 11.

There are two units to the course:

Unit 01 The Hospitality and Catering Industry (exam)

Unit 02 Hospitality and Catering in Action (coursework)

Students can achieve the overall grades, Level 1 Pass, Level 2 Pass, Level 2 Merit or Level 2 Distinction. We have high expectations of our students and expect students to achieve a Level 2 Pass or above.

Facilities

We deliver the course in our two fully equipped specialised Food Technology rooms. Each room is equipped with a commercial standard steam convection catering oven. Both rooms have a professional kitchen feel with stainless steel work surfaces and all equipment and utensils are racked out on steel shelving.
